I had some canned tuna on hand with me today... I never know how people normally eat canned tuna... tuna cracker?? but I have always used it as a ingredient to make it into a dish!
Sometime I make tuna mixed rice... which is delicious, fast, easy, and healthy! (now I want to eat it now >.<) but today I m going to make pan fried tuna nugget <3 with a little Taiwanese flare... (I think Taiwanese drama have affected me way too much )
Here is what is needed:
1/4 cup of tuna flake
1 egg
1/8 cup of all purpose flour
tapioca flour for coating
1/4 teaspoon of salt (adjust for taste)
often I get recipes that calls for 1/2 of a egg... or 1/4.. I always do not know what to do with the other half... lol... so all of my recipes will call for whole eggs ^.^
tapioca flour is a little odd to me..... it is usually used for frying Taiwanese food such as Crispy Salted Chicken (盐酥鸡) an all time favourt food of my!! <3 but when I read the recipe it calls for "sweet potato flour "地瓜粉" so I bought a package of sweet potato flour (written in Chinese) but when I looked closer at the English translation ... it says "tapioca flour.." (if you know tapioca and sweet potato.... you also know that they are nothing alike to each other...) I was a little confused.. but after seeing the result.. I do believe I got the right flour... so when you by sweet potato flour/ tapioca flour...get tapioca (in English label )
Was that too confusing??? I have been told that I am a terrible story teller >.<
mix together the tuna, egg, four and salt! into a mixture that looks like the pic above~
make small tuna nuggets and coat it with tapioca flour on both sides <3 you should be able to make about 15-20 tuna nuggets <3
I dislike this part the most! no matter what I do.. (wet hand, dry hand or w/e) I always mange to get my hand really messy... with thick battered fingers.. >.< but if you are the type of person who like to get down and messy with food.. go ahead!
add 2 tablespoons of oil to a nonstick pan.. I am kinda of a oil control freak.. I do not like adding a lot of oil... which is why non-stick pan is soooo great and loved!!
but do make sure you have enough oil so that very piece of nudge gets exposed to some oil to make it golden brown! as you can see.. I resulted to make large patties to reduce the number of time I have to coat the tune nudges with tapioca >.< (the lazy way of life!)
pan fry both sides until golden brown! with MEDIUM heat.... deep frying is an alternative that can probably produce better result... but it's too oily for me >.<
you probably wanted to know why did I use tapioca flour instead of other types coating.. it's because tapioca creates this grain like texture that's very crunchy.. but unlike any other crispy feel you have had before!
this is the first time that I have cooked with tapioca flour.. but I had it plenty of times before and I just love it!!!
definitely give it a try sometime!! I think it will be worth it.. but rmr! tapioca cannot replace other flours.. it's for frying only!
here are my finished tuna nuggets and some tuna patties (they are too pig to qualify as nugget lol... all because I am too lazy >.<)
By using the tapioca flour, it forms little white grain like things on the nugget that makes it crunchy!
I also made one that is not coated with the tapioca flour (on the button right corner).. cause I am too lazy lol..
for lunch, I also had some wonton my mom made last night! delicious combo! and again, my favourt sauce! "laoganma"
but I have to say.. nuggets tastes better than large patties... next time I will definitely make the effort to make nuggets!
